Pulled Pork from a Crockpot

Pork will always hold a special place in my heart. Bacon, sausages of the breakfast and grill varieties, and BBQ are some of my favorite ways to enjoy the other white meat. To celebrate being able to make home cooked meals again I decided to dust off the crock pot and make some pulled pork. Three lbs of pork shoulder was rubbed with a secret mixture of spices I use for BBQ and set in the fridge to marinate overnight. The next morning I threw the piggy shoulder into the Crockpot along with the following ingredients:

2 bottles of Virgil’s Rootbeer
2 cups Ketchup
1 cup Yellow Mustard
1/4 cup Apple cider vinegar
1 Tablespoon Molasses
3 Teaspoons Ancho Chile powder
1 Teaspoon Cinnamon

The shoulder sat all day in this wonderful mixture all day on the crock’s low setting. This resulted in a very sweet almost candied pulled pork.

The ancho chile powder gives a good smokey chile taste but lacks any sort of heat and 2 bottles of rootbeer was resulted in too much liquid, but that just means I have to try this again to get it right.
